Greek salad on Portobello
Some days we feel like a salad, but maybe want to add something a bit heartier to get us through that workout, soccer practice, blog editing. So here is a quick and easy lunch or dinner, greek salad on a grilled Portobello.
Portobello mushrooms drizzled with olive oil, grilled in a pan for about 3 minutes each side
Lettuce chopped (I used romaine and some swiss chard I had leftover)
1 red pepper diced (green too if you want more flavor/color)
1 cucumber diced
Kalamata olives diced/chopped
Feta cheese (I bought crumbled with Mediterranean herbs from Trader Joe’s)
Balsamic vinaigrette or dressing of your choice
Top ingredients on grilled Portobello and enjoy! Add sliced chicken or beef if you want a meat dish.
