Headed to a bbq or potluck? Summer party and need a dessert to bring? Or actually any season would work with my peanut butter pie with Oreo crust! Easy to make, with a crust that is already ready to go, you can whip this up and take it to the block party or work shindig you have been invited to. You might even want to make two, because everyone is going to want a second slice. Can also been seen on Foodgawker.
1 store-bought Oreo crust (or you can make your own with crushed up Oreos and melted butter)
1 cup heavy cream
8 oz cream cheese, room temp
1 1/4 cups creamy peanut butter
2 T vanilla
3/4 cup light brown sugar
Whip heavy cream in a stand mixer with whisk attachment or by hand until soft peaks. Set aside
With a clean bowl and the paddle attachment, mix cream cheese, peanut butter, vanilla, and brown sugar on medium high for about 5-7 minutes or until smooth.
Gently fold whipped cream into peanut butter mixture, and scoop into crust, smoothing top
Place in freezer for one hour (if making night before, cover with plastic wrap or pie top)
Take pie out of freezer about 20 minutes before serving. Cut, serve, and be the talk of the town!
