When someone does something nice for us, or is just a great person, we want to show them our appreciation.  A co-worker took notes at a meeting you couldn’t attend, your neighbor grabbed your mail while you were out of town, or your friend gave you that harsh sage advice you know you needed – make them these bars.  Caramel Salted Chocolate Chip Bars – store bought or homemade caramel sandwiched between layers of chocolate chip cookie dough.  Give them to the crush you haven’t told your bff about just yet, bring them to the work party, or just make a batch for the family and serve them warm with ice cream.  The best desserts are the simple, yet delicious ones – and that is exactly what you have here. Sometimes we do not have the right words to express how we feel. Edible thank you notes show you really do care, and it’s a memory for the recipient that they won’t soon forget.

Caramel Salted Chocolate Chip Cookie Bars

Ingredients
  • For salted caramel:
  • 1 cup brown sugar
  • 1 stick unsalted butter
  • ¼ cup evaporated milk
  • 1 tsp vanilla
  • 1 tsp kosher salt
  • For Chocolate Chip Bar batter:
  • 2¼ cups flour
  • ¼ tsp kosher salt
  • ½ tsp baking soda
  • 12 T unsalted butter, melted
  • ½ cup sugar
  • 1 cup brown sugar
  • 3 large eggs
  • 1½ tsp vanilla
  • 1¼ cups chocolate chips
Instructions
  1. Preheat oven to 325 and grease/line a 9 inch baking dish with parchment paper.
  2. Combine all ingredients for the caramel in a small saucepan over medium heat.
  3. Cook, whisking until thick and can coat the back of a spoon.
  4. In a medium bowl combine flour, salt, and baking soda. Set aside.
  5. In a stand mixer on medium speed, beat butter and both sugars until combined well about 6-7 minutes.
  6. Add eggs one at a time, mixing well.
  7. Stir in vanilla.
  8. Fold in chocolate chips.
  9. Add half the chocolate chip bar batter to the bottom of prepared pan. Smooth evenly.
  10. Next add the caramel and spread evenly.
  11. Add the remaining chocolate chip batter on top of caramel.
  12. Bake for 35-40 minutes or until middle is set and golden brown.
  13. Cut into squares and enjoy!
  14. Leftover bars can be wrapped tightly and kept for four more days.
