Sweet potato fries have gotten huge again lately, which is great for those looking for a healthier alternative to regular french fries with a burger or sandwich. These fries are kicked up a notch with some mild spice in the Cajun seasoning, and better for as you as they baked, not fried. Nice thing about this recipe is, you can do a mix of regular and sweet potato fries to please anyone that you are making lunch/dinner for.
3 large sweet potatoes cut into waffle cut with either a mandolin or a handheld cutter (you can do matchsticks as well if you would rather)
1-2 T Cajun seasoning, depending on how many fries/cuts you went with
olive oil for drizzling
salt and pepper
Preheat oven to 425 degrees
On a baking sheet lined with foil or parchment paper, evenly spread out potatoes leaving some room between fries
Lightly drizzle olive oil over the fries and sprinkle the seasoning on top of each one
Cook for about 20-25 minutes and serve warm, adding salt and pepper to taste

Looks tasty! I love sweet potates, but I’ve never have any luck with sweet potato fries, they always turn out burnt on the ends and soggy in the middle. I usually roast a bit higher, at 450, so I will try your recipe at 425 and spread them out on two sheet pans instead of one. Maybe my kids will eat them this time! 😉
just make sure to watch them, as it really depends on the size you cut them. but you know that, who a i telling

it’s pretty mild, but you could use a seasoned salt, that would be good.
