I think cake squares are adorable, like something you would serve for Alice in Wonderland. Her friends might call it a silly name instead of cake, but call it what you want, just call it delicious. The coffee gives it a deeper depth of flavor while it enhances the chocolate, and takes this dessert to a whole other level. This is queen bee stuff, not child’s play.
2 sticks unsalted butter at room temp
1 1/2 cups self rising flour
1 tsp cocoa powder
1 tsp baking powder
1 cup sugar
4 large eggs, beaten lightly
3 T instant coffee or espresso powder, dissolved in 4 T hot water
frosting
4 oz (1 pkg bakers) white chocolate broken into sections
3 T whole milk
half a stick of butter at room temp
2 cups powdered sugar
Preheat oven to 350 and grease a brownie pan (9×9) or small cake pan lined with parchment paper
Sift flour, cocoa powder, and baking powder into the bowl of a stand mixer
Add sugar, eggs, and instant coffee and mix on medium speed until combined and smooth
Pour into prepared pan, smoothing top, bake for 35-40 minutes or until a toothpick comes out clean
Cool in pan for 15 minutes and then turn onto a wire rack, let cool completely before frosting
For frosting
Place a heatproof bowl containing white chocolate, milk, and butter over a simmering pan and stir until melted
Remove from heat and sift powdered sugar into mixture until smooth, beat with a mixer if need be
Spread over top of cake/brownie and sprinkle some cocoa powder on top to make it pretty and even more picture perfect
can be eaten quickly like cake should be or wrapped at room temp for up a to week
