Ginger pear cake is a fun little cake, like your adorable bubbly friend who sees the good in everything around them. As a more cynical creature, I can appreciate the genuine creature who really does live life with their glass half full. This cake would be something they would ooh and aahh over. So grab a pear, some ginger, and flour (among a few other choice cake ingredients) and make the cake that says “I sure am glad I know you.”

Ginger Pear Cake

Ingredients
- 1½ cups all purpose flour
- ½ tsp baking soda
- 2 tsp baking powder
- ½ tsp kosher salt
- 1 stick unsalted butter, melted and slightly cooled (I use Plugra)
- 1 cup sugar
- ½ T ginger
- ⅓ cup buttermilk
- 2 large eggs, room temp
- 1 tsp vanilla
- 1 large Bosch pear, peeled and chopped into small chunks
- 1 tsp ginger sugar or regular sugar for sprinkling
Instructions
- Preheat oven to 350, grease and line a 9 inch loaf pan with parchment paper and cooking spray/butter
- In your stand mixer, add flour, baking soda, baking powder and salt and combine slightly.
- In a small bowl whisk butter, sugar, ginger, buttermilk, eggs and vanilla.
- Mix into flour mixture until combined over medium speed, careful not to overmix.
- Fold in pears and pour batter into prepared loaf pan.
- Place loaf pan on a baking sheet and sprinkle top with sugar.
- Bake for 30-40 minutes or until a toothpick comes out clean.
- May need to add foil to top of cake last 20 minutes if starting to brown quickly.
- Keep wrapped tightly at room temp for 3 days.
- Loaf can be frozen for up to 3 months.

Could this be made with canned pears rather than fresh? I have quite a few cans on hand and would like to find a good bread/cake recipe to use them in. Hoping this gets the green light!
Lisa, yes! Just drain them and cut them in chunks, you will be fine.
