Hash Brown and Sausage Breakfast Casserole

Ingredients
- 1 large 30 oz package frozen hash browns cooked according to package instructions or about 2 lbs homemade, browned slightly
- 2 lbs sausage (I used half hot, half original) cooked and drained into little chunks
- 1 tsp kosher salt
- 1 tsp black pepper
- 1½-2 cups shredded sharp cheddar
- 2 cups whole milk
- 6 eggs slightly beaten
Instructions
- Preheat oven to 350 degrees, and prepare a 13x9 baking dish (spray and parchment or spray and foil)
- Combine hash browns, sausage, salt/pepper and cheese into the baking dish and mix together
- In a medium bowl, mix milk and eggs and pour over hash brown mixture, adding a bit more salt for seasoning.
- Bake for 25-35 minutes or until golden brown and bubbly.
- Let sit for 10 minutes and serve.
- Leftovers can be refrigerated and kept for 3 days
This is gorgeous, perfect for any weekend breakfast!!
