I had a great conversation recently regarding hip hop music, theme parties, and food. And during this conversation it was pondered what would one serve at a hip hop party, complete with old school hip hop played on vinyl. So one thing that sounded good to me was simple chicken legs, but jazzed up with smoky, spicy mustard and some peppered bacon to cook with it. And while you might not have an old school record player, you can fire up the Ipod and go to town. Serve this with some easy baked french fries, mac and cheese, or brown rice and you have a meal that Mos Def would change his name back for. Can also be seen on Foodgawker.
6-8 chicken legs, dried off
3 T olive oil
1/2 cup spicy mustard
2 basil leaves, chopped
1 garlic clove, minced
2 slices of peppered bacon, sliced into chunks (uncooked)
salt and pepper
Preheat oven to 425 degrees and prepare a baking dish, either with cooking spray or lightly coated with olive oil
Place chicken in dish, opposite ends until all legs are in dish
Brush with olive oil, salt and pepper
In a small bowl, combine mustard, basil leaves, and garlic and whisk to combine. Place bacon through baking dish, covering sides and top of chicken
Smother mustard sauce on top of chicken and sprinkle with more salt and pepper if desired.
Bake for 45-50 minutes or until internal temp reaches 165. Serve warm.
Leftovers can be kept in fridge for up the three more days.
