Breakfast. A meal that is difficult for many of us – getting the kids ready, not enough sleep/running late can make it easy to skip a good meal and just pick something up.  And while I love french toast sticks as much as the next person, why not make something on Sunday that you can take to work Monday morning? My Mixed Berry Oatmeal Bake takes frozen berries, some delicious brown sugar, good for you sliced almonds and old-fashioned oats and gives you a culinary delight to start your day.  Have it as a snack before bed, because breakfast isn’t just for the am hours! Top with Greek yogurt, add some more almonds for crunch, and you my friends are the top chef of your workplace!

Mixed Berry Oatmeal Bake

Ingredients
  • For the oatmeal:
  • Butter for greasing pan
  • 1¼ cup old-fashioned oats
  • 3 T brown sugar
  • pinch of kosher salt
  • 1⅔ cup unsweetened almond milk
  • 1 large egg
  • 1 tsp vanilla
  • For the topping:
  • ⅓ cup sliced almonds
  • ⅓ cup old-fashioned oats
  • ⅓ cup brown sugar
  • 2 T unsalted butter, melted
  • 1 T flour
  • ¼ tsp cinnamon
  • pinch of kosher salt
  • 2¼ cups frozen mixed berries
  • Greek yogurt for serving (optional)
Instructions
  1. Preheat the oven to 350.
  2. Butter a 2-quart baking dish or 8-inch square baking pan.
  3. For the oatmeal:
  4. Stir together oats, brown sugar and pinch of kosher salt into a large bowl.
  5. Whisk together almond milk, egg and vanilla.
  6. Pour milk mixture into the oatmeal mixture and stir well to combine.
  7. For the topping:
  8. Stir together the almonds, oats, brown sugar, melted butter, flour, cinnamon and pinch of salt in a medium bowl until evenly combined.
  9. Pour the oatmeal into the prepared baking dish.
  10. Arrange the berries and any juice over the oatmeal.
  11. Sprinkle with topping.
  12. Bake until lightly browned and just set, about 45-50 minutes.
  13. Let cool 10 to 15 minutes.
  14. Serve warm with a dollop of yogurt.
  15. Leftovers can be brought to room temp and refrigerated for three days.
