Kentucky Derby Pie

This pie. It’s crunchy, filled with chocolate chunks, pecans, a buttery crust and just a splash of whiskey. Because why shouldn’t pie have a bit of whiskey in it? Traditionally this pie is made with bourbon, but you use what you have, and in this case it was a cute little bottle of Tennessee whiskey. Kentucky Derby Pie is ready to eat with a scoop of whipped cream and some chocolate shavings - fancy hats not included. Use my pie crust recipe for the best pie crust ever made. Ever.

Kentucky Derby Pie

Ingredients
  • 1 Bestest Pie Crust Ever chilled for at least an hour or overnight
  • 8 T unsalted butter melted and cooled (microwave butter then chill in fridge 10 minutes)
  • 2 large eggs
  • 1 cup sugar
  • ½ cup flour
  • 1⅓ cups chocolate chunks (use chocolate chips if you have those on hand)
  • 1½ cups roughly chopped pecans or pecan pieces
  • 1 T favorite whiskey
Instructions
  1. Preheat oven to 350.
  2. Place crust in a 9 inch pie pan and set aside.
  3. In a stand mixer beat butter and eggs together for 3 minutes on medium high speed.
  4. Turn mixer down to low and add sugar.
  5. Mix to incorporate and slowly add flour.
  6. Fold in chocolate chunks and pecans and then stir in whiskey.
  7. Pour into pie shell and place on a baking sheet.
  8. Bake for 30-35 minutes or until middle is set.
  9. Let cool for 5 minutes and add fresh whipped cream or vanilla ice cream and chocolate shavings.
  10. Leftovers can be kept at room temp for three days.
  11. Pie can be frozen and brought to room temp for up to two months.
