We all need simplicity in our lives. When we get busy we tend to skimp on dinner, hitting the drive thru or heating up a frozen pizza. While there is nothing wrong with quick dinner fixes, why not have dinner waiting when you get home? My Slow Cooker Balsamic Chicken is fork tender, juicy and simple - just make the rice when you get home, add a salad or some veggies, and you get to be the dinner hero once again! Dinner doesn’t have to be complicated, but it can sure taste like it is!
- 4 to 6 skinless, boneless chicken breasts
- ½ - ⅔ cup balsamic vinegar
- 2 T brown sugar
- 2 T freshly grated ginger (or use 1 T ground)
- 2 garlic cloves, minced
- 1 T freshly chopped cilantro
- Dry off chicken and place in slow cooker
- Combine remaining ingredients into a bowl (except cilantro) and pour over chicken
- Cook on high for 3 hours or low for 5-6 hours until chicken is fork tender
- Serve over rice and sprinkle cilantro on top
- Leftovers can be refrigerated for three days or once meat comes to room temp you can freeze in a freezer safe container for a month
