Raisin and Apple Cider Cookies

One thing I love to do in the fall is going apple picking.  There is nothing better than tasting an apple right off the tree, a true delight I just found out about a year or two ago.   Another thing you can usually pick up while at the orchard is cider-a fall classic if I do say so myself.  So use some of those apples and that cider and make these cookies.  With a little powdered sugar glaze on top, you will have a cookie that is a bit spicy, a bit sweet, and all around delicious.

 

Cookies

1 cup raisins

1/2 cup apple cider

1 stick unsalted butter at room temp (I used Plugra)

1 cup brown sugar (dark or light will do)

2 large eggs at room temp

2 cups flour (can be all purpose or half AP, half whole wheat if you prefer)

1/2 tsp kosher salt

1 tsp baking soda

1/4 tsp ground cloves

1/2 tsp nutmeg

3 T whole milk

1 large apple or 2 small apples, peeled, cored and diced into small chunks

 

Glaze

1 cup powdered sugar

1 T water

 

Preheat oven to 350 and line two baking sheets with parchment or Silpats. 

In a small bowl, pour cider over raisins and set aside

With the paddle attachment, beat butter and brown sugar on medium high speed for about 5-7 minutes or until light and fluffy.  Add eggs one at a time, turning speed to medium.  Scrape down sides of bowl once both eggs have been added.

In a medium bowl add flour, salt, baking soda, cloves, and nutmeg, whisking to combine.

One low speed, add half the flour mixture to the butter/eggs, then milk, then the rest of the flour, mixing on low just to combine.

Drain raisins from cider and pat to dry slightly with a paper towel.   Fold in raisins and apples to dough.

With a cookie scoop or tablespoon, add dough to baking sheet with about an inch and a half of room between each cookie.  Bake for 12-14 minutes or until light brown and firm around the edges.  Cool on a rack to room temp.

In a small bowl combine powdered sugar and water, drizzling glaze over each cookie.

Cookies can be kept wrapped tightly at room temp for up to four days.

    So funny - we went apple picking today (had a wonderful time!) and picked up some cider too. I wasn’t sure I’d do anything special with it. The kids love drinking it cold or hot. But I’m bookmarking this recipe in case I can manage to save some of it for baking! YUM.
