Swiss Mushroom Burger Pizza

I love pizza.  It’s literally my favorite food.  As I was thinking of new recipes, I thought why not a swiss mushroom burger pizza? This is my gran’s favorite burger, one of the few fast food things she will eat.  So here is a chance to try it on pizza.  Would be a great game night addition, or just any night you do pizza and want to try a new one.  Don’t let the amount of steps intimidate you, it’s actually comes together quite quickly as easily.

Swiss mushroom burger pizza

½ cup cooked ground meat (salt and pepper to season)

1 store bought or homemade pizza dough

2 cups shredded swiss cheese or about 6-8 slices

Pizza seasoning (I use Penzey’s) optional

Preheat oven to 500 degrees with pizza stone is heating up if using.  Let oven preheat the whole time you are making the pizza.

Bechamel sauce

2 T butter

1 T olive oil

1 cup heated milk

1 cup shredded mozzarella cheese

1 tsp Dijon mustard

black pepper

Heat butter and olive oil in a saucepan over medium high heat.  Once melted, add milk and cheese, stirring occasionally to get thick (add more cheese if necessary or if you are a cheese fan) and add mustard and pepper.  Let thicken on low heat while you make the rest of the pizza, stirring to keep thick

Caramelized onions

2 T butter

2 medium white onions sliced thin

½ cup white wine or stock

salt and pepper

Melt butter in saucepan adding onions stirring while browning.  Once onions have softened (about 10 minutes) add stock or wine and scrape bottom of pan.  Add salt and pepper and let caramelize, about 20 minutes

Sauteed mushrooms

1 T butter

1 T olive oil

6 baby bella mushrooms cut into slices

Melt butter and olive oil in pan, adding mushrooms once melted.  Sautee on medium high heat for about 5 minutes, stirring occasionally

Add béchamel sauce to pizza dough, making a thin layer

Add ground meat, onions and mushrooms, layering or topping as you like

Top with cheese, sprinkle on pizza seasoning if using.

Add a bit more béchamel sauce over pizza lightly for extra flavor

Bake for about 7-10 minutes, depending on how brown you like your cheese.  Slice and enjoy!
