This pie. I am patting myself on the back for this no bake banana freezer pie recipe. Simple ingredients, and has fruit in it so that makes having an extra big slice totally acceptable. Add cherries, whipped cream, and sprinkles if you fancy. Keep in freezer between slices to keep it extra firm. It might be cooler outside, but pie is always a good choice for dessert!
No bake banana freezer pie

this pie can be made year round to keep you cool in the summer, and remind you of warmer days in the colder months
Ingredients
- One baked pie crust, cooled
- 1 stick unsalted butter
- 1½ cups sifted powdered sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 squares of semi-sweet baking squares, grated
- 1 T lemon juice
- 3 bananas sliced thin
- ¼ cup nuts of your choice (I used almonds)
Instructions
- Beat butter and powdered sugar together in medium high speed in stand mixer until mixed well and smooth, about 5 minutes
- Add eggs one at a time, beating each one for 2 minutes
- Add vanilla and mix for 30 seconds
- Add grated chocolate and mix to combine
- In a small bowl, mix lemon juice and sliced bananas, reserving some for the top (5-10)
- Turn mixer down to low speed and fold in bananas, mixing for about a minute or until combined
- Fill pie shell with filling and top with bananas and nuts-refrigerate for 2 hours if wanting to serve right away (if making day before, keep in freezer overnight to keep solid)
- Leftovers can be left in the fridge/freezer for up to three days.
