Cinnamon Cake

I love fall baking-the smells, the cardigans I wear while mixing, whisking, beating, separating. So cinnamon cake came about after a talk I had while getting my hair done-smells that remind of us certain times of years, places, people. To me the spiciness of cinnamon makes me want to make a mug of hot chocolate, curl up on the couch and watch the snow fall. This cake comes together quick and easy, and you should have everything in the house, including butter, for me it’s Plugra. No running to Denmark for goat’s milk, pinky swear.


Cinnamon Cake

Ingredients
  • 3 large eggs
  • 1½ cups sugar
  • ¾ cup whole milk
  • 2 cups sifted flour (measure then sift)
  • 2 tsp baking powder
  • 4 T melted unsalted butter (I use Plugra)
  • Cinnamon topping
  • 5 T melted unsalted butter
  • 2 tsp cinnamon
Instructions
  1. Preheat oven to 400 degrees
  2. Line and grease a 9x9 square pan
  3. In stand mixer or by hand, beat eggs until light and fluffy
  4. Add sugar and let mix until combined
  5. Scrape down sides and add butter, mixing for one minute
  6. Add milk and flour/baking powder in three stages, taking turn
  7. Mix until combined on low speed
  8. Pour into prepared pan
  9. Pour the 5 T of melted butter evenly on top
  10. Sprinkle cinnamon over butter, coating evenly
  11. Place cake pan on a baking sheet
  12. Bake for 25-30 minutes or until toothpick comes out clean

Leftovers can be wrapped up and kept at room temp for three days

    I see that it says to top with cinnamon sugar after the 5T of melted butter but the recipe doesn’t say how much sugar for the topping. Thanks.

      Thanks for asking, it is actually just the cinnamon, but for a bit of crunch you could add a 1/2 T of sugar as well.
