If I was a cookie, I have decided a ginger cookie is what I would be-spicy, needs time to chill, and a nice brown color. Ginger cookies are thought of as a holiday cookie, so wrap these bad boys up in a gift bag and pass out at one of the many holiday parties we all go to. Or be like me, a tiny bit selfish, and keep some back for yourself. Either way grab the spices, put on your baking slippers, and bake away!

Ingredients
  • ⅔ cup shortening
  • 1 cup sugar
  • 1 large egg, beaten
  • ¼ cup dark molasses
  • 2 cups flour
  • 1 tsp ginger
  • 1 tsp kosher salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp ground cloves
Instructions
  1. In a stand mixer beat shortening and sugar until well combined
  2. Add egg and molasses and beat on medium speed until combined
  3. Whisk together dry ingredients, adding slowly on low speed
  4. Chill dough for 2-4 hours
  5. Once chilled, preheat oven to 350 degrees
  6. Prepare baking sheets with parchment paper
  7. Roll out dough and cut with a one/two inch cookie cutter
  8. Bake for 10 minutes or until edges are browned
  9. Cool and serve
  10. Remaining cookies can be kept at room temp for up to five days
  11. Dough can be frozen for up to three months

Does anyone else say molasses like Colonel Sanders or is that just me? Asking for a friend…

    These sound really yummy I am going to try replacing the Molasses with Agave Syrup/ Coconut Sugar with some water though

    You know…there is no doubt that I’m a chocoholic in pretty much every category….but there is a special place in my heart for spice cookies such as these. They look so delicious…I’ll be printing this recipe to bake for me. There’s very little chance that I’ll be sharing them. :-) <3
