Baked Skillet Sweet Potatoes

Side dishes can sometimes get lost in the shuffle of a meal. We want something tasty to accompany our main dish, be it meat, tofu, pasta, or fish. My baked skillet sweet potatoes will not be a backup singer, an extra who just walks by in the background. These baked sweet potatoes, covered in a parsley garlic sauce? A definite co-star. So bake up some chicken, grill a piece of fish, and whip this up in less than 30 minutes, start to finish. You will be happy to have these bad boys starring in your dinner premiere.


Baked skillet sweet potatoes

Ingredients
  • 4 sweet potatoes, washed, peeled and cut into medium thick slices
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 2 T olive oil
  • 1 T minced garlic
  • 1 T chopped parsley
  • ½ tsp orange zest
  • 2 T olive oil
Instructions
  1. Preheat oven to 400 degrees and line a cast iron skillet with lightly greased parchment paper or grease a small baking dish
  2. Combine sweet potatoes, salt, pepper, and olive oil in a bowl and toss together. Place in cast iron skillet or baking dish and cook uncovered for 20-25 minutes or until potatoes are soft and tender
  3. Combine garlic, parsley, other 2 T of olive oil and orange zest in a small bowl and top over warm sweet potatoes. Serve and enjoy!
  4. If any leftovers, place in a food safe container in fridge for up to three days

      it’s just sweet potatoes, olive oil, salt/pepper, parsley, orange zest and garlic so unless any of those have gluten it should be

      It’s definitely worth it, a cast iron skillet. And they are reasonably priced. I recommend the Lodge brand.

    I didn’t discover sweet potatoes till I was an adult. I have never looked back! Like you, Janelle, I love them sliced up in a skillet. This is a great and easy way to enjoy such a good-for-you veggie.

    Made this for dinner tonight along side some roasted broccoli/cauliflower and steak. It was delish! I omitted the orange zest as I did not have. Definitely will make again!
