Rhubarb Jam

rhubarb jam side close We won’t go into the story of how I got the rhubarb-how the guy behind me ask me very innocently if I was making pie.  To which I  said “no I am making jam” and how he went on to say his mom used to make pie, and then jumped to his troubled marriage and how his wife can’t make the pie worth a damn.  At this point I just wanted to get my bags and go because I had left my Oprah cape at home.  But I digress…

I am working on non processed foods this month (in addition to many with sugar so don’t worry) and I came up with this slow cooker rhubarb jam.  Good for you, delicious, and easy to make, with only five ingredients.  So you can have it whipped up in no time!  The basil brings out the sweetness in a natural way, trust me and add it.  Just keep your marital pie troubles out of the jam, it makes it sad.

4 cups chopped fresh rhubarb (wash thoroughly and dry)

1 T fresh lemon juice

1 T lemon zest

1 tsp fresh basil

4 T raw honey

 

Add all ingredients to your slow cooker, cook on low for 4-6 hours or until cooked down. *I didn’t need to hand blend as it was cooked down and soft, but if you want it thinner, hand blend until right consistency

    Fantastic idea for use of rhubarb! I am picking some up from a friend this week with the intention of using it for pie, now I know something new I will be trying as well. Thanks for this great post!

    That’s funny. My son was reading a book with the main character named “Rhubarb” and I had to explain that it was a plant. Maybe I should make this for him and make the story come alive. I enjoyed your story behind the recipe. Non-processed is the way to go for sure. It’s hard to say if things we eat are “products” or “food” anyone these days! Blessings to you~

    I adore Rhubarb, I can eat an entire Rhubarb-Strawberry pie on my own but I have never tried a Jam. Maybe it would help me eat breakfast more often O.o

    I remember having rhubarb pie as a child and it was so good. I am not sure that I have had rhubarb at all since then, but your jam sounds really good.

    Nothing beats home made rhubarb jam. My neighbor made strawberry rhubarb jam and gave me a jar. I love it. I can make peanut butter with strawberry rhubarb jam sandwich. Good!! Thanks for this easy recipe, great because I have a crockpot, I can try making this.
