This will be one of the easiest recipes you will ever make - it simply takes time to bake and you have a delicious side dish (or dinner if you aren’t super hungry) for your evening meal. Using good olive oil is the trick, as your potatoes will bake in them, and you want great flavor and taste. You can spice the potatoes up with a little cayenne pepper if that is more to your liking.
Note: if using fresh herbs, which is recommended, cut measurements in half
Herb Potatoes

Ingredients
- 6 russet potatoes
- 1 T kosher salt
- ½ T dried rosemary
- ½ T dried thyme
- 4 T olive oil
Instructions
- Preheat oven to 425 degrees
- Line baking sheet with foil or Silpat
- Cut potatoes into slices, cutting off bottoms so they will stand upright
- Place in a large bowl with remaining ingredients and mix until combined
- Place potatoes into a baking dish close together and pour oil mixture on top
- Bake for 45-55 minutes or until potatoes are fork tender
- Eat while hot
