I am a huge honey fan-works great for a sore throat, on fruit, or in this case, in muffins. I happen to have some lavender honey leftover from another recipe, so I thought why not make muffins? So I did, and this is what came to be-lavender honey oatmeal muffins. Sometimes things just work out.
1 1/2 cups flour (you could do half all purpose, half whole wheat)
3/4 cup old fashioned oats
1/2 tsp salt
1/2 tsp cinnamon
2 tsp baking powder
1/4 tsp baking soda
2 large eggs, beaten
1/2 cup milk
1/3 cup lavender honey (regular if you want)
1/4 cup vegetable oil
Preheat oven to 375 degrees and line a muffin tin with muffin liners (makes about 8-10 muffins depending on how much you fill them. Suggested: 3/4 way full)
In stand mixer with paddle attachment, mix flour, oats, salt, cinnamon, baking powder and soda together on low speed until combined. Add remaining ingredients to flour mixture and mix on medium speed until combined, careful not to overmix
Bake for 22-25 minutes or until center comes up clean. Serve warm or keep at room temp wrapped tightly for up to four days
I’m curious to where one would get lavender honey. I have never heard of it. It sounds neat though!
