Meatloaf Burger with Tomato Relish

Meatloaf is a tried and true tradition that for many of us brings back memories of our childhood. Depending on your family, you remember it with or without ketchup on top, the meal of choice when there was leftover ground beef to use up.

So to take a spin on that and kickoff burger month, I introduce my Meatloaf Burger with Tomato Relish. Thick pieces of meatloaf, cheese, and relish to give you that homemade classic dish updated into a handheld dinner.  Try it with my paprika buttered corn on the cob (2 T butter melted with 2 tsp paprika, brushed onto hot corn on the cob) and you have a summer dish that might just become a regular in your household.  What you will need for burgers:

My meatloaf recipe

Tomato Relish – I used yellow tomatoes for color, but any color or type you like will do. Be sure to blanch (place in hot water for one minute, dip in ice bath and peel skin off) before making. This recipe makes enough for four people

1 lb small yellow tomatoes, peeled

Half of a red onion, diced

1/2 jalapeno pepper, seeds out and sliced thin

1/4 cup apple cider vinegar (red wine would work as well)

2 T brown sugar

Place all ingredients in a sauce pan, season with salt and pepper and let simmer for 40 minutes, stirring occasionally. Place in a glass mason jar and let cool.  Will keep in fridge for one month

 

Cheese of your choice (I used pepper jack, spicy cheddar, and white American for this dish)

Meatloaf Burger with Tomato Relish

Ingredients
  • Meatloaf
  • Tomato Relish
  • Cheese
  • Hamburger Buns
  • Batch of Paprika buttered corn on the cob (recipe in post)
Instructions
  1. Slice meatloaf into thick slices
  2. Add a slice of cheese to bottom and top of each bun
  3. Slather tomato relish on top and bottom of buns
  4. Place meatloaf between buns and serve with corn on the cob
