Mighty Fine Apple Pecan Bread

While putting this recipe together I imagined myself in a big southern kitchen, peeling apples while a fan blows back and forth across the room.  The apples, purchased that morning from a local farmer’s market are juicy and sweet, ready for eating or baking. This day I decide to put them in a quick bread, with some roasted pecans and a little bit of cinnamon.  This is the type of bread you let cool and share with a friend, a neighbor, your co-workers or save for yourself, to eat in the morning warm with some butter, or as a mid-day snack.  Take to a potluck, a church reception. or a little picnic out back. But make it, because it is warm and comforting, just as I imagine that big southern kitchen to be.

 

Recipe makes two 9 inch loaves

3 cups of small chopped apples, peeled and cored (any variety will do, I used gala as I had those in the house) **do this first**

1 cup vegetable oil

2 cups sugar

2 tsp vanilla

3 large eggs, beaten slightly

3 cups AP flour

1 tsp baking soda

1/2 tsp salt

2 tsp cinnamon

1 cup chopped pecans

 

Preheat oven to 350 degrees and line 2 9 inch loaf pans with parchment paper, greasing lightly

In a stand mixer fitted with the paddle attachment, mix oil, sugar, vanilla, and eggs together on medium speed until comes together in a smooth batter

In a medium bowl, mix flour, baking soda, salt, and cinnamon together.  Turn mixer down to low, add dry ingredients until incorporated  (batter will be thick)

Fold in apples and pecans and mix all together quickly and gently

Pour batter into loaf pans and smooth top with a knife or small offset spatula

Place loaf pans on a sheet pan and place in oven, baking for 1 hour or until a toothpick comes out clean (I usually check at the 45-50 minute mark to see how much time is still needed)

Cool on wire racks and serve

Can be kept wrapped tightly at room temp for up to five days

Freezes great, store tightly and freeze for up to two months

    This looks delicious. We won’t get fresh apples for another month or so. We always go to an apple festival over Labor Day. This would be great to make with all those delicious apples.

      that sounds yummy with honey butter or cream cheese too. Will keep this in mind for apple season.

    Yum! I love apple bread and the pecans push it over the edge to Fantastic. I make something similar and love to slice and toast it. I loved your southern kitchen image its so true at how we float away when creating. Sharing this everywhere lol :)
