Old School Butter Yeast Rolls

I used to make bread all the time when I was in culinary school-I would have a starter going (required by school to keep it alive during the whole semester) and I would use it to make sourdough, sandwich bread, whole wheat, pizza dough, whatever sounded good at the time.  The smell of bread baking is one of true and total comfort.  For this recipe I wanted something you could do on the weekend, or a weeknight, that would still allow you time to watch your favorite show, or catch up on some much needed me time.  Yeast is not something you should be afraid of-keep it in the fridge to keep fresh longer, and can be used straightaway.  Warm liquids are your friend when it comes to yeast, and if it doesn’t work, try it again!  If you want real bread inspiration, go visit my friend Derik over at House of Bakes.  Give this recipe a try, you will be able to brag to family and friends how you made it from scratch!

 

4 tsp active dry yeast

1 1/2 cups warm milk, warmed up to 100 degrees (you can microwave for about 1 min)

4 1/4 cups all-purpose flour, plus about 1/2 cup more for dusting and kneading

2 tsp salt

1 large egg

3 T sugar

4 T melted unsalted butter (I used Plugra)

Egg wash (1 egg, 1 T water, pinch of salt)

 

Butter a 13×9 baking pan

In the bowl of your stand mixer, add the yeast and milk, and let proof for one minute.  Add flour, salt, egg, sugar, and melted butter and mix on low speed with the dough hook attachment.  Mix for two minutes and increase speed to medium high, mixing for 15 minutes.  You will need to add flour to help get the dough off the sides of the bowl, add about a 1tsp at a time.  Dough will be sticky but smooth.

Flour your surface and turn dough out, kneading (add flour as needed) five times and form a ball.  Place in a large oiled bowl and let proof in a warm place covered with saran wrap or a towel for an hour or until dough is doubled in size.

Place dough back on a floured surface and dust with a bit more flour and form until baseball sized balls.  Tuck the dough at the bottom and place in the baking sheet right next to one another. Cover and let rise for 20 minutes while you preheat the oven to 375 degrees

After rising, brush the top of each roll with the egg wash, and place in preheated oven for 15-20 minutes, or until brown on top and inside registers 200 degrees. You can also check for doneness by thumping each roll and listen for a hollow sound.

Serve warm with lavender honey butter, herbed butter, or just plain butter

Can be kept for a four days wrapped tightly at room temp. Recipe can be made the day before, put in fridge wrapped tightly and take out about an hour before you bake them to get them back to room temp.

    Those sound heavenly and with my great imagination I am sitting here smelling them and salivating! I doubt I would attempt to make rolls or bread from scratch because I live alone and would eat them all at one sitting!

    I have only made rolls once and it did not turn out that great, I will have to try them again if I feel like putting on my oven:)
