Onion and Rosemary Flatbread

This is one of those endless possibilities recipes. you can choose any combo of things that sound good to you-you could change the herb to thyme or do an dried italian blend, adding tomatoes and a bit of mozzarella cheese on top. This time I tried onion and rosemary, mostly because we had some leftover onions that were already sliced and ready to use. This flatbread takes about an hour or so start to finish, so you could get it ready before band/soccer/football/dance practice and have it ready to top while dinner is cooking on the stove. Tastes great with just a little salt, pepper, and olive oil baked right in too.

4 cups of bread flour or 2 cups bread, 2 cups AP flour
1/2 tsp kosher salt
1 1/2 tsp active dry yeast
1 1/2 T dried rosemary (2 T if fresh)
1 1/3-2 cups warm water (about shower warm)
5 T olive oil divided (3/2)
half a red onion sliced thin into rings
3 tsp kosher salt

In a bowl mix flour and salt together, adding yeast and rosemary, mixing until incorporated (this is best done by hand, if using mixer do on low with the dough hook) In the center of the flour make a well and add the warm water and 3 T of olive oil. Stir until dough comes together, and knead on a floured surface for about ten minutes. Roll into a ball and place in a well oiled bowl. Cover and let sit in a warm place for about an hour or until dough is about double in size

Preheat oven to 425 degrees

Oil or grease a sheet pan and roll out dough into a long oval. Let rest with towel on top for 15 minutes
Using a wooden spoon, make indentations in the dough and spread onion rings on top. Drizzle remaining oil on top of onions and sprinkle the salt and rosemary (if using fresh let cook and add rosemary last ten minutes)
Let bake for about 20-25 minutes or until golden brown. Let cool for ten minutes and serve

If using later, let come to room temp and wrap tightly to store. Can be kept at room temp for up to a week

      I think this would need to be made with yeast unless you have a yeast less flatbread recipe
