Slow cooked Korean spiced pork

My daughter loves kimchi. Loves all types of Korean dishes, and I never try and tackle them, as her grandmother is full Korean and makes it the right way. But while reading up on Korean spiced meats, I thought why not give something safe like pork a try. You can have this on a bun with some slaw as a sandwich, over rice, or as a main dish with a side of sweet potato hash (recipe on blog!) I love this recipe because you put it in the slow cooker, forget about it, and come back to a delicious dinner. And we could all use a little more easy in our lives.

Korean spiced pulled pork (slow cooker edition)

1 pound of pork shoulder

2 tsp hoisin sauce

1 T smoked brown sugar

1 tsp kosher salt

1 tsp black pepper

½ tsp ground ginger

4 T soy sauce

½ tsp siracha

¼ tsp red pepper flakes

Slow cooker

Dry off meat and set aside

Combine all other ingredients and rub onto pork

Slow cook on low for 8 hours

This looks so fabulous! I love using my slow cooker all year round. It just makes life so much easier to have dinner planned and ready ahead of time. I love the spices and flavors in this too.

Just finished putting the ingredients I needed for this on my grocery list. We have five baseball games this week, so the slow cooker will be in heavy rotation! Can’t wait to try it!

First of f all the meat was very tender. I used 2 pork tenderloins , each 1.5 lbs. So I did triple the sauce for the added meat. I found the sauce to have good flavor but was way too salty for our taste. I think it would have suited my taste buds better if I had omitted the salt as the soy sauce is salty enough. I ended up rinsing off all the meat in water after I shredded it. My hubby loves salty stuff and it was still pretty salty for him even after rinsing off. Ended up putting it in tortilla with cheese, lettuce, and sour cream. I would definately make it again, as it was very easy, but will cut out all the salt next time. Thanks for the recipe Janelle!

Glad to hear it, and you are right soy sauce is salty. I think mine might have been less sodium or light. Thanks again for letting me know!

Made this today for my family. I quadrupled the recipe as I had a 4 lb pork shoulder. It was fantastic!! I made it up with sandwiches and added some sake with Siracha in the sauce. Rave review from the hubby, but even better was the kids loved it too! Definitely going into our regular rotation! So easy and so delicious!
