Zucchini is definitely easy to get right now-I picked some up at the farmer’s market, had a co-worker bring me some, my boss gave me two bags of shredded zucchini. So I have this easy side dish that can be ready in 30 minutes, and great for a last minute guest of honor with a piece of grilled fish or chicken, alternative to fries with a burger for those eating healthier, or a quick appetizer if you have unexpected guests. A few ingredients come together to make this simple and delicious thyme roasted zucchini. Can also be seen on Foodgawker.
2 large or 3 medium zucchini quartered into chunky cubes
1 yellow or white onion sliced thin
6-8 sprigs fresh thyme or 3 T dried
2 T olive oil
1/2 T kosher salt
3 tsp black pepper
Preheat oven to 450 degrees and line a baking sheet with foil or parchment paper
Mix all ingredients together and place on baking sheet evenly
Bake for 30 minutes or until tender and starting to golden brown (if using fresh thyme you can remove the springs if you want or keep as garnish)
Serve warm or reheat the next day
