Farmer’s Market Zucchini Gratin

I love getting up on Sundays and heading down to the farmer’s market.  The hustle and bustle, the dogs, the talkative vendors who have a story or a recipe suggestion for their homegrown goodies.  So today I knew I wanted to do something with zucchini, and I had a ton of cheese and eggs-so I went French, added a bunch of butter, milk, and heavy cream, and here you go, zucchini gratin. Great side dish, great main dish on these hot summer days, or a good potluck dish to bring along with a bottle of wine.  Go visit the markets, the fresh veggies, great small talk, and new recipes are worth the drive/walk/bike.  Can also be seen on Foodgawker.com

Half a stick of unsalted butter

3 large zucchini or 5 small zucchini sliced

3 T chopped parsley or tarragon (could add a little mint in with either to kick it up a notch)

2 cups grated cheese (I used a mixture of farm fresh marinated feta and a parm/pecorino mix)

1/2 cup heavy cream

1/2 cup milk

2 eggs, slightly beaten

salt, pepper and a pinch of nutmeg

 

Preheat oven to 350 and prepare a baking dish

Melt butter over medium high heat and add zucchini, sauteing for 5 minutes, 2-3 on each side.  You will have to do this in stages, so place cooked zucchini on a paper towel/parchment lined baking dish and sprinkle with salt and pepper

Spread half the zucchini on bottom of baking dish, then half the herbs and half the cheese. Repeat once again

Mix heavy cream, milk, and eggs together, along with 2 tsp salt, 1 tsp pepper and the pinch of nutmeg.  Pour over the zucchini and add a little more cheese

Bake for 35-45 minutes or until center is brown and set. Let cool for 5 minutes, serve, and enjoy!

Leftovers can be refrigerated and saved for up to three days

    I like the idea of adding mint to this and I appreciate that the recipe is flexible. You can pretty much make this with any combination of cheeses and herbs that you have lying around (or growing). I’d like to try this with a smoked moz, gruyere, thyme and rosemary.

    And why don’t I have a skillet?! Must purchase soon…
