Summer Vegetable Pizza

This pizza is pretty much up to you-I used yellow squash and asparagus, as my grocery store has already cut up mixes, and I thought it would be a good combo.  Zucchini would be fabulous, maybe some hearty mushrooms to beef it up.  This pizza is quick and easy, and can be grilled on the bbq, or made inside in the oven.  With the holiday coming up, this is a great alternative for those who might not like the normal hamburger/hot dog menu, or just to add some bling to your already fabulous array of 4th of July delights. 1 large pre-baked pizza crust or 2 small crusts (store bought or homemade, whatever you choose, just bake first)

1 large yellow squash cut into thin slices

1 1/2 cups cut asparagus

1 large tomato chopped

3 T your favorite Italian dressing (2/1)

1 cup of grated mozzarella cheese

1/4 cup grated parmesan cheese

Preheat oven to 450 or grill to high heat

Saute squash and asparagus over medium high heat with 2 T italian dressing until crisp, about 4 minutes

Spread tomatoes over pizza crust and brush with remaining italian dressing. Top with sauteed vegetables and add cheese (for a little spice, add a pinch of crushed red pepper flakes

Bake for about 10 minutes or until cheese is melted. On grill should take about 5-7 minutes to melt cheese, but watch carefully depending on how high your grill gets

Serve hot

    We used to making vegetarian pizzas at home with spinach, tofu and eggplant. I never have thought that asparagus would also make as a good ingredient.

    Oh that looks like a great little pizza. I made pizza with my boys one time. I think its a great family activity and they can decide what they want on their own pizza.

    looks really good. To tell you the truth, I don’t think I have never not put meat on a pizza. If it is going to look this yummy, I may try!

    This looks fantastic and something that I could eat. I cannot eat regular traditional pizza due to the red sauce gives me awful acid problems. I have been trying to search for a white pizza without the red sauce and this is something I have been looking for. Thanks!
