Apricot Preserve Glazed Carrots

Carrots - they are what they are right? Great for you, awesome crunch, tasty dipped in ranch or dips. This recipe for apricot preserve glazed carrots helps make your Easter (or any meal) side dish that much more delicious. Have this with ham, or turkey and bring your side dish game up a notch.

Since this is such an easy and affordable dish, definitely use the best ingredients, including the butter.

Apricot Preserve Glazed Carrots

Ingredients
  • 2 lbs sliced carrots
  • 1¼ tsp salt, divided
  • 3 T butter (I use Plugra) http://plugra.com/product-information
  • ⅓ cup apricot preserves
  • pinch of ground nutmeg
  • 2 tsp orange zest
  • 2 T orange juice (use juice from zested orange)
  • 2 springs of chopped Italian parsley
Instructions
  1. Add sliced carrots and 1 tsp salt to boiling water in a large saucepan, about 15 to 20 minutes or until tender; drain.
  2. Melt butter in small saucepan over medium heat
  3. Stir in apricot preserves until blended.
  4. Add remaining ¼ tsp salt, plus nutmeg, orange zest and juice, stirring until well blended and simmering.
  5. Add to cooked carrots and toss to coat.
  6. Garnish with chopped parsley and serve

    You’ve just made me wonder why I never make carrots. I don’t have any reason, because we love them, I just never think to make them. That’s going to change. Seriously. These look so delicious. I would like to take a spoon and dip it into that glorious buttery apricot orangey sauce too. Well, maybe a few dips of the spoon. Okay. Maybe I’d like to just pick up the bowl and drink. Is that okay to do in public? <3
