Jacked Up BBQ Pulled Chicken Nachos

These are just as they are titled-jacked up bbq pulled chicken nachos.  If regular nachos had a pretty awesome cousin, they would be these bad boys.  There is amazing Omaha Steaks pulled chicken with bbq sauce, that takes less than 10 minutes to heat up in the microwave, avocados, tomatoes, green onions, cilantro, and everything else that makes an afternoon or evening jacked up to a ten.   For added awesomeness, I also used queso cheese, which is available everywhere now (I went to a local Mexican grocery store to get the good stuff).  So grab some pulled chicken, cut up the great toppings, and have a nacho night.  

Recipe is for both trays that are included in the box (32 oz) so you could half this if you are cooking for less people:

32 oz Omaha Steaks pulled chicken with bbq sauce, heated up and shredded 

1 large bag of favorite tortilla chips 

6 oz (half a bag) of shredded cheese (I used colby jack blend) 

4 oz queso fresco grated thin

1 can drained black beans

2 avocados chopped thick

1 red onion, diced 

3 roma tomatoes, diced 

4 green onions diced thin

2 jalapenos, seeded and diced

1 serrano pepper, seeded and diced 

cilantro chopped (to taste) 

add ons: sour cream, salsa, refried beans, chopped cooked bacon 

 

Preheat oven to 425 and line a baking sheet with foil.  On an oven safe plate or platter, or directly on the foil if you want, add chips and lay out evenly.  Add pulled chicken, and cheese and melt in oven for about 5-10 minutes, or on broil for about 2 minutes, carefully watching cheese so it doesn’t burn.

Take out of oven and load up the nachos with all the delicious toppings, and serve warm, with salsa, sour cream, and guacamole if you have some!
