It’s summer, which means dessert will likely have fruit in it. And for my Plugra Gourmet Club Party, this was definitely the case! Instead of your normal upside down cake with pineapples (and sometimes cherries) I went with Summer Peach Upside Down Cake. Fresh or frozen peaches work great here, so if your Farmer’s market is brimming with the juicy fruit, go with fresh. This truly was a simple (and sweet) ending to a wonderful summer get-together!

Summer Peach Upside Down Cake

Ingredients
- 4 T Plugra unsalted butter
- ½ cup packed brown sugar
- 2 cups sliced, pitted and peeled peaches or frozen unsweetened peach slices cut in half lengthwise
- 1¼ cups flour
- 1¼ tsp baking powder
- ¼ tsp salt
- 8 T Plugra unsatled butter at room temp
- ¾ cup sugar
- 1 egg
- 1 tsp vanilla
- ½ cup milk
Instructions
- Preheat oven to 350 degrees
- Place the 4 T butter in an 8x8x2-inch baking pan
- Melt butter in oven about 5 minutes (make sure to watch carefully to avoid browning the butter)
- Remove pan from oven
- Add brown sugar, stirring until sugar is completely moistened
- Spread sugar mixture evenly in pan
- Arrange peach slices evenly over brown sugar mixture
- Set aside
- In a medium bowl, combine the flour, baking powder, salt and set aside
- In a large bowl, beat the 8 T of room temp butter with an electric mixer on medium high speed for 30 seconds
- Add the sugar and beat until well combined
- Add egg and vanilla, beating until combined
- Turn mixer to low speed and alternately add the flour mixture and milk to butter mixture until just combined
- Spread batter evenly over the peaches in the pan (will be thick cake batter)
- Bake for 45 to 50 minutes or until a wooden toothpick inserted near the center comes out clean
- Cool in pan on wire rack for 10 minutes
- Loosen cake from sides of pan; invert onto a large serving plate
- Cool for 10-15 minutes more
- Serve warm
